Order by the pound. Add to comments how many squash - they are all on the small side. Perfect size for a pressure cooker.
Spaghetti squash has a light to dark yellow firm exterior. Inside the squash is stringy - like spaghetti.
To bake: Halve squash lengthwise; remove and discard seeds. Place squash halves, cut side down, in a large baking dish. Using a fork, prick the skin all over. Bake in a 350 degree F oven for 30 to 40 minutes or until tender.
Remove the squash pulp from shell. Toss squash pulp with 1/4 cup of the Parmesan cheese, 3 T butter, 1 T fresh basil, and salt. Sprinkle with the remaining 1/4 cup Parmesan cheese.
Makes 6 servings.
You can also serve the squash with your favorite Pasta Sauce
My favorite way to cook spaghetti squash now is using a pressure cooker.
Wash the exterior. Cut the squash crosswise to preserve the spirals. A lengthwise cut gives you shorter strands.
Put squash in pressure cooker, cut side up. Add 1 cup of water and cook for 7-10 minutes. After pressure goes down, it is ready to serve.
