The Hayman Sweet Potato is an heirloom variety mostly grown on the Eastern Shore of VA. The flesh is a greenish yellow. Haymans are smaller than most varieties. Its exterior has an unattractive dirty look with tan bumps and veins on the surface. . The best way to cook them is to bake them until they are soft. Serve them hot or cold.
